New player: What Pokemons should I prioritize?

I'm a new player and just got my first badge. I'm capturing every Pokemon I come across, but I'd appreciate some help choosing who to level up to have an all-round good team.

My starter is Orchynx.

I personally just prefer to have Pokemon with what I consider the best designs.

Check the wikia dex. Anything with an average of above 80 is pretty good.

Trying to structure your team to beat gym types doesn't really work since most of them are designed to beat their weaknesses, so yah just pick solid Pokemon and you shouldn't have many problems

Not sure if I understand what you mean by "average of above 80".

Ok. So from the Pokemon I have so far...
Orchynx (Metalynx): 88
Mankey (Primeape): 75
Chyinmunk (Kinetmunk): 69
Grozard (Terlard): 75
Barewl (Gararewl): 70
Tonemy (Tofurang): 71
Smore (Firoke): 70
...Orchynx is probably the only one I should keep on my team long-term? And Grozard - being my best Ground-type - should be the one learning HM06?

Edit: All of the stats above are for the evolved form, btw.

I'm new as well Is this game more focus on stats then? should I just try to capture Pokemon with stats about 80?

lol honestly just use things you like, as long as you train enough you can get by with anything

The basic thing with Pokemon is that early Pokemon evolve early, but have lower base stats whereas later Pokemon have the highest base stats, but are found late in the game and evolve at very high levels. The middle contains Pokemon with base stats slightly lower or similar to your starter, with a few hidden gems here and there.

What I personally would like to do is catch a Pokemon that catches my eye and/or isn't a similar type to my starter.

You should add a Modrille to your team in the future it would be a great addition to your team it has many attacks which do more than 90 damage.

If you can find a baashaun, he's one of my preferred 'mons. It's a dark/fighting type.

why you dont evolve your primeape ?

They can't get the Jungle Crown until after the 4th gym.

What do the Ev and IV portion of the stats mean? I'll have some pokemon where a stat will be 0/11 and another pokemons same state will be 0/25?

EVs and IVs are in reference to the way stats are generated and grow in the games. They've been in the official games in some form or another from the start, but Uranium has them visible to make competitive breeding and training easier.

In bold are the only ones I'm sure I want to evolve. Any advice on others appreciated

I'd say train up Dunsparce. There's a surprise around level 41-42.

I recommend training up Pahar. Its final evolution, Pajay, is a very powerful special attacker.

I can attest to Pajay being good. I love running him on my team.

TBH, there are many water types around to use, but Blubelrog is good nonetheless. (I run it, and the fact that it naturally learns Ice Beam for coverage is nice.)

Like Brainoar. I run him water/psychic.

Pajay looks promising and considering it rekt my Fire starter with it's ability.

Dunsparce is pretty handy. He's tanky enough to stall out something with roost which can be really important at times.

If I should say some good pokes they would be:
Mankey (you may catch at Moki town I believe)
Fortog (Also near moki town with old rod)
Baashaun (trade for a fortog)
Glaslug (mid game with surf or good rod)
Cocaran (near Bealbeach City)
S51 (Mistery Gift)
Female (sponee, tricwe, smore) because of Seikamater.
